Bye, tinapay. Hello, gluten-free bread

Growing up in the Philippines, the usual bread we had at home were Pandesal, Tasty, or Monay. Four decades later, my digestive system cannot tolerate gluten the way it used to. So in the spirit of β€œpara-paraan” (finding ways), here I am, experimenting with all the possible gluten-free bread recipes I could find. I, of course, have a choice of giving up bread altogether and not worry, eat real bread and face the consequences or, do this (see picture).
